Vinoteca “Dissident”

Restaurant Vinoteca “Dissident” is on the 5th floor of the shopping centre “Nautilus” on Lubyanka street. The interior of the Vinoteca is rather simple, though filled with elegance. Aged oak floors, white Belgium brick walls, hand-made furniture, antique chandeliers show good taste. But at the same time a pile of wine boxes and an exhibition of assorted bottles bring democratic and slightly ironic shade. A breathtaking view on Lubyanskaya square from the open terrace is a wonderful addition to the interior of the restaurant.

 

A distinctive feature of the restaurant-vinoteca is that here the wine is in the first place, the “highlight of the programme”. Though in this case the cuisine is chosen “for wine”, it still plays an important role as fine wine should go with fine dishes.

 

The wine list in the restaurant Vinoteca “Dissident” is extensive and represents a non-trivial approach to the choice of wine. Preference is given to rare kinds of wine and little-known wine producers. In the Vinoteca you can taste more than 200 wines by the glass. Here there are also special wine tasting sets, consisting of 2-4 kinds of wine with selected by chef gastronomic accompaniment to each of them.

 

The European cuisine in “Dissident” is presented in a fairly concise but carefully considered menu. Snacks with fish and seafood (“Tuna Tartar”, “Scallops with celery sauce”) are offered with white wine. For the main course will suit "Omar, grilled in aromatic herbs," or bream and sea bass, which can be prepared on request: grilled, steamed, in white wine, foiled with herbs and vegetables, baked in sea salt or roasted with garlic and rosemary. As a snack for red wine you may choose “Warm salad with pheasant, oyster mushrooms and rocket salad” or “Veal carpaccio”. With this type of wine a nice match will be "Pappardelle with rabbit, mushrooms and black truffle" and "Venison fillet with foie gras, baked in pastry." For dessert, there are "Panna cotta with mango puree" and "Semifreddo with wine"Recioto”.
