Ideal Gurmanization: Dariya Kondratenko speaks about the restaurant «Dolkabar»

Every week we meet with different people and ask them about their favourite example of “gurmanization”: combination of a restaurant’s atmosphere and its cuisine quality.


The famous blogger, traveler and photographer Sergey Dolya opened his restaurant «Dolkabar» in 2012. Gurmanization.ru met with our guest Dariya who used to work there as a waitress and found out why «Dolkabar» is her favourite place in Moscow.


«I learned about this restaurant for the first time from the “Live Journal” of the famous blogger, traveler and photographer Sergey Dolya. And I thought that it had to be an interesting place with nice people. It happened so that at the time I was looking for a job but not full-time, only for weekends. I was treated very nice in “Dolkabar” and got the job.


The restaurant was opened last year in September, so after some time I came and remained there for half a year. It was a great experience although it was very hard physically. There were always really polite and well-educated clients, even at my cheerful “full-house” weekends.

Three or four times I was here as a guest. But even being at work and during all usual visits I had this special sensation of coming back to good old friends. Sergey Dolya is often in here, he always comes up to the guests, greets them, smiles, sometimes he can ask or tell something. There is a very friendly atmosphere indeed.


What can I recommend from the menu? “Dolkabar” has a wonderful chef. I advise you to order one of his original dishes – “Dolburger” (beef loin burger), it’s delicious.

For the first time in my life I tried bruschetta with chicken breast and mozzarella di buffalo here. I’d also recommend pork ears with honey-mustard sauce, Dorado fillet baked in foil with vegetables, and warm salad with scallop, shrimps and fried mango. Today I’ve ordered tuna tar-tar in nut bread.

Tasty desserts, especially crème-brulee with wild berries and tiramisu with Baileys sauce. Cheese cake is too soft, it won’t suit everyone, I suppose. I like the milkshake “Sneakers” very much, its taste really reminds the famous sneakers chocolate bar. Among alcoholic cocktail (there are plenty of them in the menu) I usually choose “Zombie №2” and “Singapore Sling”.


“Dolkabar” has an excellent cuisine and rather average prices. It’s good to come here with a big company, especially in the evening. It’s noisy, cheerful and tasty here. On Fridays and at weekends it’s always stuffed.

I’m not sure if it’s comfortable to work here as it’s rather noisy here in the evening. Perhaps in the morning or afternoon it’d be better. I know that when it’s somebody’s birthday, the restaurant’s staff bring a cake and sing a song for this person.


I come to the restaurant because of its good atmosphere and to get a delicious meal. I always choose the place in different ways: sometimes I search through the internet, or some of my friends recommend something. But as a rule the best choice is made at random. You just walk along the street, look at the cafe’s signboard, like it, come inside and realize that you’ve made the right choice.


I like it when the staff is smiling and friendly with the guests. I might mark out the interior of the place. And I think it’s a right tendency of making things simple. You know, the simpler the better».
